PELATIHAN PEMBUATAN NACOLANG – NATA de COCO BUNGA TELANG DI KELURAHAN BUNULREJO, KOTA MALANG
Abstract
The Community Service Activities program of Health Polytecnic of Putra Indonesia Malang "Production of Nacolang – Nata de Coco with Butterfly Pea Flower" in the Bunulrejo sub-district of Malang City aimed to address the suboptimal utilization of coconut water while enhancing the skills of residents in creating economically valuable products. Coconut water often became waste in traditional markets; thus, through this training, it was processed into nata de coco with the addition of butterfly pea flower extract. The butterfly pea flower extract was selected for its beneficial compounds, such as antioxidants and antimicrobial properties. This training employed the Asset Based Community Development (ABCD) method, focusing on the utilization of local potential, specifically the butterfly pea flower and coconut. The implementation involved 36 participants from the Bunulrejo PKK women’s group and proceeded through several stages, including socialization, theoretical instruction, and hands-on practice. Lecture, question-and-answer sessions, and simulations were utilized to facilitate the understanding and application of new skills by the participants. Evaluation results indicated that 80% of participants felt very satisfied, while 15% felt satisfied with the program. The success of this training not only provided new skills but also encouraged residents to develop healthy, environmentally friendly, and economically valuable food-based enterprises. Overall, the program positively impacted the maximization of natural resource potential and enhanced the local economy ahead of the fasting month. With these new skills, residents are expected to develop sustainable business opportunities through the innovative product of nata de coco with butterfly pea flower.
